Cocktail Recipes

Here are some fabulous concoctions from Barman/Partner Matt Nurge of The Red Rabbit Kitchen & Bar in Sacramento, California.

 

COVE'S CUP

Ingredients

2 oz Clipper Cove Pier 12
2 Dashes of Peach Bitters
Ginger Beer

Directions

Place Clipper Cove and Peach Bitters into Rocks Glass
Fill with Ice
Fill with Ginger Beer
Garnish with Fresh Mint, Cucumber Slices, Seasonal Berries
No Straw


RASPBERRY LIFT

Ingredients

2 oz. Clipper Cove Pier 12
1 oz. Cream
½ oz. Simple Syrup
1 Whole Egg White
5 Raspberries
Soda Water

Directions

Muddle all but Soda Water into shaker
Dry shake for 1 minute (no ice)
Add a few cubes of ice
Shake for 1 minute
Strain into Fizz Glass
Wait 30 seconds then fill with Soda Water
Straw


CLIPPER PUNCH

Ingredients

2 oz. Clipper Cove Pier 12
1 oz. Pineapple Cordial
1 oz. Lemon juice
½ oz. Tawny Port
Small Pinch Salt

Directions

Combine ingredients into shaker
Shake and "dirty dump" into a Rocks Glass (no strainer)
Garnish with Pineapple Wedge, Lemon Twist, and Brandied Cherry
Straw


THE ALBATROSS

Ingredients

2 oz. Clipper Cove Pier 12
2 dashes Angostura Bitters
Peel of Whole Lemon
Ginger Beer

Directions

Pour Clipper Cove and Bitters into a Collins Glass
Drape peel of Lemon while adding ice to fill glass (try to keep lemon peel as close to the sides of the glass as you can)
Fill with Ginger Beer
Straw


POWER SOUR

Ingredients

1 ½ oz. Clipper Cove Pier 12
½ oz. Lemon Juice
½ oz Local Honey Syrup
1 Whole Egg White
Jerry Thomas Bitters

Directions

Combine ingredients, excluding Bitters, into shaker
Dry shake for 1 minute (no ice)
Add a few cubes of ice and shake for 1 more minute
Strain into Sour Glass or Coupe
Garnish with ribbons of Jerry Thomas Bitters

Local Honey Syrup Recipe
Put equal parts of your favorite local honey and water in a small saucepan. 
Boil, then turn down to a simmer and stir until the honey is completely dissolved.
Cool, then store in an airtight container in the refrigerator.


CLIPPER COBBLER

Ingredients

2 oz. Clipper Cove Pier 12
2 oz. Sherry (Oloroso)
2 Sugar Cubes
3 slices Fresh Fruit (Blood Orange)

Directions

Muddle all ingredients in a Zombie Glass
Fill with crushed Ice
Garnish with Mint and Fresh Berries
Straw
